A simple yet delicious traditional dish is relished in Catholic families. Like most of the old favourites, this one is slowly disappearing.

Ingredients Serving: 9

  1. For the Stuffing:
  2. 3/4 cup coconut freshly grated
  3. 1 1/2 tsp palm jaggery
  4. 1/8 tsp salt
  5. 1/2 tsp cardamom powder
  6. For The Pancake Batter:
  7. 1/2 cup maida/AFP
  8. 1/4 tsp salt
  9. 1 egg Milk as needed
  10. a pinch baking powder
  11. ghee as needed

Instructions

  1. Preparing the stuffing:
  2. In a pan, add the coconut, jaggery salt, and 1/4 cup water.
  3. Cook on low flame. Cook until the mixture comes together. Add the cardamom powder.
  4. Let the mixture cool.
  5. For The Pancakes:
  6. In a bowl, add flour, salt, egg and baking powder.
  7. Add milk as needed to make the batter for a thin pancake. Grease a small skillet with ghee.
  8. Pour a little batter into the pan. Swirl the pan to spread the batter in the pan.
  9. Cook for a minute. Transfer to a plate.
  10. Add the stuffing and wrap the pancake around the stuffing.
  11. Make the next 8 pancakes in the same way. Make the next 8 pancakes in the same way.
  12. Assembling the Pancakes: This is the way to wrap the stuffing.
  13. Stack them and serve with a cup of tea.
