Italian Almond Raisin Biscotti

This is my first entry for ongoing contest. This recipe is very special recipe and is very easy to make. The recipe credit goes to my dear friend Meenaz Surve. Thank you Meenaz so much for such a lovely recipe.

Ingredients Serving: 8

  1. 3/4 cup roasted almond
  2. 2 cups of all purpose flour
  3. 1/2 cup wheat flour
  4. 1/4 tsp Baking Soda
  5. 3/4 tsp Baking Powder
  6. 1/4 tsp salt
  7. 1/4 cup raisins
  8. 1/2 cup oil
  9. 1 cup sugar
  10. 2 tbsp cornstarch mixed with 4 tbsp water or 2 eggs
  11. 1 tsp almond essence
  12. 1 tsp vanilla essence

Instructions

  1. Take a bowl and mix in together all purpose flour, wheat flour,baking powder,baking soda and salt.
  2. Add in chopped almonds and raisins to the flour.
  3. In another bowl add in oil and sugar and beat well. Add cornflour and water mix or 2 eggs, vanilla and almond essence and beat for 30 seconds and after some time beat again for 30 seconds(beat twice for 30 sec).
  4. Add dry ingredients into wet and form a dough.
  5. Divide them into 2 equal parts and form a log.Place this logs on a parchment paper lined tray and bake at 180 degrees c for 30 minutes in a convection oven.
  6. After 30 minutes remove from oven and let it cool completely. Once cooled slice them and again bake at 160 degree c for 10 minutes .
  7. After 10 minutes turn them over and bake for again 10 minutes.
  8. Let them cool and serve with hot milk or coffee
