Baked Mac and Cheese

Ingredients to make Baked Mac and Cheese

  • 200 grams Macaroni
  • 2 1/2 cup whole milk
  • 1/2 cup grated processed cheese
  • 1/2 cup grated cheddar cheese
  • salt to taste
  • 50 grams (3-4 tablespoons) salted butter
  • 2 tablespoons olive oil
  • 1/4 cup all purpose flour (maida)
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper powder
  • 1 teaspoon red chilli flakes or 1/4 teaspoon paprika powder
  • 4 bread slices

How to make Baked Mac and Cheese

  1. Chop off the corners of bread slices and grind them coarsely in a grinder to make crumbs. Add 1 tablespoon melted butter and mix well. Keep aside.
  2. In a heavy bottomed saucepan, heat the remaining butter and add all purpose flour (maida). Cook maida on a low flame for 2 minutes.
  3. Meanwhile heat milk in another vessel. Add 1/3 of the milk to maida, add butter and whisk. Add the remaining milk and whisk until all the lumps get dissolved. Cook sauce on a low flame for about 7 minutes or until it has thickened.
  4. Once the sauce starts to coat the back of a spoon, remove it from heat and add grated cheeses. Mix well until the cheese dissolves. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper powder, oregano and chilli flakes.
  5. Heat 3-4 cups of water in a big pot. Add 3/4 teaspoon salt and 1 tablespoon oil. Once it starts boiling add macaroni and cook until they are 3/4 cooked. They should remain little chewy and not completely cooked. Pass them through a colander pass cold water over them.
  6. Add the macaroni to cheese sauce and coat them completely. Grease an oven safe baking dish with oil and pour the mac and cheese to it. At last cover the top with bread crumbs and bake at 180 degree centigrade for 20-25 minutes.
  7. Serve it warm with garlic bread or fresh garlic toasts.

My Tip:

You can use more cheese according to your need! Cover the dish with aluminium foil if the top starts to get very brown. Adjust the amount of salt according to your need. You can also add some slightly cooked chopped onions and some boiled corn in the recipe.
