About Rajasthani Chakki Ki Sabzi Recipe

Rajasthani chakki ki sabzi is a popular Rajasthani gravy curry that is mainly made in jodhpur. It is a yummy, delicious side dish consisting of wheat flour dumplings, made from the gluten and cooked in a yogurt based gravy.

Rajasthani Chakki Ki Sabzi

Ingredients to make Rajasthani Chakki Ki Sabzi

  • for chakki:
  • 1 cup wheat flour
  • 1/2 tsp salt
  • 1 pinch turmeric powder
  • water as required
  • oil for frying
  • for gravy:
  • 1 tbsp ghee
  • 1/2 tsp cumin seeds
  • 1 bayleaf
  • 1 dry red chilli
  • 1 onion chopped finely
  • 1 tsp ginger-garlic-green chilli paste
  • salt to taste
  • 1/2 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 2 tsp coriander powder
  • 1/2 cup curd
  • water as required

How to make Rajasthani Chakki Ki Sabzi

  1. in a bowl add flour, salt and turmeric powder, mix well
  2. add water and make a soft dough
  3. keep the dough aside for 1 hour
  4. after 1 hour, wash the dough with a fine strainer under running water, start streaching the dough with your hands in the sieve till the dough looks stretched
  5. let the dough lose extra flour in the water and what will remain is a paste like dough, similar to chewing gum
  6. now pinch small sized balls from the dough and slightly flatten them
  7. fry the dough pieces in hot oil but let it not become too brown
  8. chakki is ready, keep aside
  9. heat ghee in a kadai
  10. add cumin seeds, bayleaf and red chili, fry for few seconds
  11. now add onion and saute until onions are translucent
  12. add ginger-garlic-green chilli paste and fry till raw smell is gone
  13. now add salt, red chili powder, turmeric powder,coriander powder and saute for a minute
  14. add curd and water and boil for few minutes
  15. add the prepared chakki and cook for 4-5 minutes
  16. chakki ki sabzi is ready, serve hot with roti
