This vegetable is made from cluster beans and yoghurt.Tempering of fennel seads gives a distinct flavor to this sabji.

Ingredients Serving: 4

  1. Cluster beans 250 gms
  2. Curd 1 cup
  3. Gram flour 2 tsp
  4. Red chilli powder 1 tsp
  5. Turmeric 1/2 tsp
  6. Salt
  7. Coriander powder 1 tbsp
  8. Oil 2 tbsp
  9. Mustard seeds 1/2 tsp
  10. Fennel seeds 1 tsp
  11. Cumin Seeds 1 tsp
  12. Asafoetida 1/4 tsp
  13. Garlic cloves 5(optional)
  14. Curry leaves 1 sprig
  15. Coriander for garnishing

Instructions

  1. Clean and cut cluster beans into 1 inch pieces.
  2. Boil in a pan with water and salt or take 3 whistles in a pressure cooker.
  3. Drain all water from cluster beans.
  4. In a bowl rake curd,besan, turmeric ,red chilli powder, coriander powder and salt.
  5. Whisk properly into a lumpfree batter.
  6. Take a broad pan.Add oil in it.
  7. Put mustard seeds,cumin seeds,fennel seeds and asafetida.
  8. When these splutter add finely chopped garlic and curry leaves.
  9. Saute for a minute.Add the curd paste and half a cup of water.
  10. Mix and simmer for 3 to 4 minutes so that rawness of besan goes away.You will see oil droplets on surface when it is cooked.
  11. Add the boiled cluster beans.
  12. Mix lightly.Cover and cook at low flame for 3 to 4 minutes.
  13. When the sabji will be ready you will see oil floating on top.
  14. Garnish with green coriander and serve with hot rotis or rice.
