ABOUT Sukhadi ( gur papdi) RECIPE

Authentic gujarati sweet made from ghee, wheat flour and jaggery. A healthy and quick sweet with just 3 ingredients.

Ingredients Serving: 4

  1. Ghee 1 cup
  2. Chopped jaggery 1 cup
  3. Whole wheat flour 1 cup

Instructions

  1. Chop the jaggery in small fine pieces
  2. Measure all the three ingredients and keep ready
  3. You can use a little less ghee then measurement if you require.
  4. Heat ghee into pan and as it is heated add whole wheat flour to it and keep stirring on low.flame
  5. Continuous mixing and stirring is necessary to prevent it from sticking and also to get even colour and is properly done.
  6. Approximately after 5 minutes you will smell a fresh aroma of ghee and flour and the colour also has changed to little brown, you must be able to decide proper colour of it. If you under do it sukhadi will break and not taste proper and if the colour is very dark sukhadi will be hard and chewy to eat. Don't worry if you do not get at first attempt you can try again.
  7. After you get desired color switch off gas immediately and add jaggery to it and quickly mix it well until there are no lumps of it.
  8. Transfer onto greased plate and spread it evenly. Smoothen the above with the spatula itself
  9. When it is still warm cut into diagonal shape and let it cool down further to get desired shape. You can also serve warm at this stage.
  10. Enjoy this healthy sweet and can be stored up to a week in air tight container.
