Rasgulla is a kind of syrupy dessert extremely popular in West Bengal as well as other parts of Indian sub continent. It's a kind of dumpling of Indian cottage cheese which is very easy to make.

In a saucepan pour 2 litre milk and bring to boil.
When milk starts boiling, simmer and add the vinegar. Mix lightly.
Take a muslin cloth and drain the chena.
Now rinse the chena that is reserved in the cloth under a running tap.
Tie cloth to hang from the tap for 10 minutes so THAT any excess water will drop out.
In the meantime put a broad vessel on stove top . Put 6 cups of water and 2 cups of sugar.
Bring to boil till sugar dissolves completely . Add cardamom. SIM the flame to very low and come to make the rasgulla.
Put the prepared chena to a plate. Start knead the chena with your palm.
Continue to knead to make the chena smooth.
Now from the chena dough take small lime size portion and make round shape.
Try not to form deep cracks. Make around 10-15 balls.
Bring the sugar syrup into boiling point again and drop the balls in the syrup one by one.
Cover and cook for 12-15 minutes in medium high heat.
In a big bowl or any other container, pour cold water to the top.Now add 1 more cup sugar to the boiling syrup and mix.
Cook till.Sugar dissolves.Remove from heat, let the syrup to cool a bit.
Now squeeze gently the rasgullas that are dunk in water one by one and drop in the warm syrup.
