ABOUT DUDHI AUR RAJMA KA MILAN RECIPE

Dudhi aur rajma ka milan is great north indian recipe that you can easily try at home.

Ingredients Serving: 4

  1. 2cups red kidney beans (soaked overnight and boiled)
  2. 4 cups water
  3. 2 medium onion (finely chopped)
  4. 2 bay leaves (optional)
  5. 1tbsp ginger and garlic (each of finely chopped)
  6. 1/2 tsp each of asafoetida and turmeric powders
  7. 1tsp cumin seeds
  8. 2tsp red chilli powder
  9. 2 big tomatoes (finely chopped)
  10. 1 tsp each of hot spice mix (garam masala)and cumin powders
  11. 2tbsp coriander powder
  12. 3 tbsp oil
  13. Salt to taste
  14. Coriander leaves (finely chopped)
  15. 250 gm dudhi (peeled and diced)

Instructions

  1. Drain the soaked red kidney beans and wash them well. Place them in a pressure cooker (for speedy cooking).
  2. Add the water and some salt. Close the cooker and cook on high flame.
  3. After one whistle, cook on low flame for about 10 minutes or till the beans are soft.
  4. Heat the oil in a heavy bottomed pan on medium level and crackle the cumin seeds.
  5. Add the bay leaves (optional), asafoetida and chopped ginger garlic.Fry briefly.
  6. Add the chopped onions and fry till they are golden brown.
  7. Add all the spices powders except hot spice mix.
  8. Add the chopped tomatoes. Fry till the oil separates.
  9. Add the cooked red kidney beans along with its stock , sprinkle salt, mix well and cook on medium flame for about 15 minutes.
  10. Also add in the diced peeled dudhi and mix well.
  11. Add the hot spice mix. Cover and cook on medium flame for about 5 minutes.
  12. Garnish with finely chopped coriander leaves
