Ingredients Serving: 4

  1. Potato...7 or 8
  2. Oil....1 table spoon
  3. Tomato finely chopped 2 or 3
  4. Salt and green chillies to taste
  5. Ginger and garlic paste...1 tea spoon
  6. Mustard seeds or jakhia...1 tea spoon
  7. Teaz patta...1 or 2
  8. Asafoetida ...1 pinch
  9. Turmeric piwder....1/4 tea spoon
  10. Red chilly powder....1/4 tea spoon
  11. Coriander powder....1/4 tea spoon


  1. Wash potatoes and clean them nicely so that there is no dust remains, you may take help of warm water, clean thoroughly on the eyes of potatoes because there is chance of dust there
  2. Now take a deep vessel and with a heavy pestle, start grinding the potatoes coarsely, you should preferably take deep vessel because otherwise juice of potatoes will spill
  3. Now in a woke take oil, asafoetida and mustard seeds and let it splutter, add bay leaf, ginger garlic paste, green chillies and aloo paste and saute it for 10 minutes, now add red chilly powder, coriander powder, turmeric powder, salt and cover it for 5 minutes
  4. Add tomatoes and cover again for 5 minutes.
  5. Again saute and add 1 glass of water and cook covered for some time
  6. Check the consistency and add garam masala, if want to use
  7. Keep on dum for some time
  8. Enjoy uttarakhandi aloo ki thechauni
