ABOUT Vagharelo Rotlo RECIPE

Vagharelo Rotlo is a traditional kathiyawadi dish, a preparation made out of leftover bajre ki roti. It is a gujarati dish having smokey flavour of garlic.

Ingredients Serving: 1

  1. Bajri ka atta 1 cup
  2. Grated garlic cloves 1-2
  3. Salt to taste
  4. Water as required
  5. Oil 2 tablespoon
  6. Mustard seeds 1 teaspoon
  7. Asafoetida a pinch
  8. Turmeric powder 1/2 teaspoon
  9. Red chilli powder 1 teaspoon
  10. Cumin-coriander powder 1 teaspoon
  11. Buttermilk 1/4 cup
  12. chopped Coriander Leaves 1/4 cup

Instructions

  1. Seive bajri ka atta in a flat surfaced bowl. Add salt to taste, grated garlic and water to it. Prepare a medium to soft dough.
  2. Knead it till it turns smooth. Roll a ball of it and prepare the roti with hands by tapping it between the palms.
  3. Roast it on clay tawa and store it in normal temperature till the next day.
  4. Heat oil in a wok. Temper with mustard seeds, asafoetida & chopped garlic. Saute for 4-5 seconds. Add turmeric powder, red chilli powder & cumin-coriander powder.
  5. Immediately add 2 tablespoon of buttermilk to prevent the spices from getting burnt.
  6. Crumble the bajre ki roti before heating the oil & add it now. Mix well. Add a pinch of salt (the roti is already salted).
  7. Add a tablespoon of buttermilk and mix properly.
  8. Sprinkle chopped coriander leaves and serve hot with chilled curd.
