ABOUT Ravioli with Basil Sauce RECIPE

Italian dumplings which consists of two pasta sheets filled with a filling, typically cheese based. The basil sauce is quick to make and has a very excellent basil flavor. I filled the raviolis with a vegetarian filling.

Ingredients Serving: 4

  1. For making herb pasta:
  2. 110 grams all purpose flour
  3. 2 tablespoons fine semolina
  4. 1/2 teaspoon salt
  5. 2 tablespoons olive oil
  6. 1/2 teaspoon dried basil
  7. 1/2 teaspoon dried parsley
  8. For making stuffing:
  9. 2 boiled and peeled potatoes
  10. 1/3 cup grated processed cheese
  11. 2 tablespoons grated parmesan cheese
  12. 1 tablespoon corn flour
  13. 1/3 cup coarse bread crumbs
  14. For making basil sauce:
  15. 3 ripe tomatoes pureed
  16. 3 tablespoons Funfoods pizza sauce
  17. 1/4 teaspoon chili paprika
  18. 2 teaspoons dried basil
  19. 1 teaspoon dried oregano
  20. 1/2 teaspoon dried parsley
  21. 2 tablespoons olive oil
  22. Salt to taste

Instructions

  1. For making pasta dough, combine all the ingredients and make a smooth but little sticky dough using water. Cover it and keep it in the refrigerator for 1 hour to chill.
  2. For making stuffing, grate potatoes and add both the cheeses and all the other ingredients. If you feel the stuffing is still a bit sticky then you can add some more bread crumbs. Mix and keep it in the refrigerator to cool.
  3. For making basil sauce, heat oil in a pan and add pureed tomatoes. Boil for 3 minutes and then add pizza sauce and all the other ingredients as well. Cook for 2 minutes and turn off the heat.
  4. Take out the dough and make small balls out of it. Sprinkle flour on rolling surface and some over the dough ball and using a rolling pin roll the ball into a circle of about 3mm width.
  5. Using a drinking glass, cut a circle out of it. Place the rolled pastas under a damp cloth. Make more pastas like this.
  6. For assembling the raviolis, take one pasta circle and place 1 tablespoon of filling in the center of it. Brush some water on the outside of the filling and place the other pasta sheet on top and press lightly both of the sides to stick them.
  7. Make all the raviolis like this. Heat enough water in a big vessel and add 1/2 teaspoon salt to it. Once it starts boiling, reduce the flame to low-medium and put the raviolis in it. Cook them until they turn a bit hard and come on top of the water.
  8. While serving, pour some sauce on a plate and place raviolis on top. Sprinkle some dried basil and enjoy! Buon appetito!
