No onion no garlic masala rice using leftover rice.

Ingredients Serving: 3

  1. Leftover rice - 1 bowl
  2. Carrot chopped into bits - 1
  3. Capsicum chopped into bits - 1
  4. Tomatoes - 1 chopped
  5. Turmeric Powder - a pinch
  6. Bay leaf - 2
  7. Garam masala - 1 tsp
  8. Jeera - 1 tsp
  9. cashew nuts - 6
  10. Ghee - 1 tbsp
  11. Oil - 1 tbsp
  12. Salt to taste
  13. For Grinding:
  14. Green Chillies - 2
  15. Ginger - a small piece
  16. Star anise - 2
  17. Coriander leaves - a handful
  18. Mint leaves/ pudina - 4-5

Instructions

  1. Grind the ingredients mentioned under masala section without adding water.
  2. Take a kadai. Add ghee and oil. Fry cashew nuts and keep aside.
  3. To the same kadai, add jeera, bay leaf, carrots and fry till done.
  4. Add finely chopped tomatoes and saute.
  5. Then add capsicum.
  6. Now add ground masala, garam masala, turmeric powder and salt.
  7. Add cooked rice and mix well. Take care not to break the rice while mixing.
  8. Garnish with cashewnuts.
