Whenever I cook Khoba paratha, it evokes nostalgic memories of my childhood as I had it for the first time at my Rajasthani neighbour's house

Ingredients Serving: 2

  1. Left over wheat flour dough
  2. 1/2 tsp salt
  3. 3 tsp ghee
  4. 1/2 tsp ajwain
  5. 1/2 tsp garlic powder or 5 crushed garlic cloves

Instructions

  1. To Make the Khoba Paratha- Now, take one dough ball and roll it little n put pinch of salt ,ajwain, garlic powder n ghee on it ,mix them little n again make ball.
  2. Roll it into a thick circular shape using a rolling pin
  3. Use fingers or kitchen tong (chimta) to form that line shape on the entire circle (inside n outer edge).
  4. Repeat this process till all roti's are made
  5. Cooking the Khoba paratha -- Heat a non-stick pan on high.
  6. Place the raw khoba roti on it and let it cook for 1 minute (lower the heat during this process for even cooking).
  7. Turn the khoba roti to another side and cook for another minute.
  8. While the parantha is cooking on the pan, use a thick kitchen cloth to press and cook it even further. Turn the parantha to another side and continue the same process using the kitchen cloth.
  9. Once the roti's are cooked on both the sides, apply some ghee on top of each paratha, sprinkle with garlic powder(optional)n salt.
  10. Serve Rajasthani Khoba parathas with Hot Curry or chutney.
