ABOUT Leftover Roti Cake RECIPE

This cake is really healthy, melt in mouth and best use of leftover roti. This recipe which i tried is my friend krupa's recipe. Thanks for sharing this yummy cake recipe and best use of lefover rotis.

Ingredients Serving: 5

  1. Leftover rotis 10
  2. Wheat flour 1/2 cup
  3. Jaggery 3/4 cup
  4. Baking powder 1 tsp
  5. Baking soda 1/2 tsp
  6. Milk 1/2 cup
  7. Oil 1/2 cup
  8. Curd 1/4 cup
  9. Coco powder 1/4 cup
  10. Chocolate powder 2 tbsp
  11. Vanilla extract 1 tsp
  12. Cream frosting :-
  13. Whipped cream 1 & 1/2 cup
  14. Icing sugar 4 tbsp
  15. Edible Liquid Food colour blue and red 3 to 4 drops
  16. Butterscotch extract 1/2 tsp
  17. Chocolate chips 2 tbsp

Instructions

  1. Crush the leftover rotis on pulse mode keep it in a bit granule form. (10 small rotis have been used.)
  2. Mix whole wheat flour, cocoa powder, chocolate powder, baking powder and baking soda.
  3. Sieve the dry ingredients 3 times and then mix well with crushed rotis in a bowl.
  4. Keep the dry ingredients aside.
  5. In another bowl take grated jaggery add curd and whisk it till both mix properly.
  6. Now add the vanilla essence to the mixture.
  7. Keep whisking continuously and add oil gradually.
  8. Now add milk and the dry ingredients in two parts one by one.
  9. Transfer the properly mixed cake batter into a greased baking tin.
  10. Bake in a preheated kadai for 35-40 mins till properly baked.
  11. Now for icing shift cream in a chilled bowl add icing sugar and butter scotch extract and beat it till get stiff peaks.
  12. Cut the baked cake into two halves.
  13. Apply some cream on cake and shift second part on it then cover the cave with white cream.
  14. Now divide cream into 3 part and add red color in one part then blue colour in second part.
  15. Leave one part as it is white.
  16. Fill the pipping bag with colour cream and white cream carefully in one bag.
  17. Garnish your cake with cream frosting. Add some chocolate chips on sides of cake.
  18. Your yummy cake from leftover rotis is ready to serve.
  19. Everyone will love this healthy yummy cake.
