Leftover parottas are added to vegetables and eggs to make a healthy makeover of Vegetable egg kothu parotta. It is a wholesome filling dish to all ages.

Ingredients Serving: 2

  1. Leftover Parotta 2
  2. Onion 1 chopped
  3. Tomato small 1
  4. Carrot 1
  5. Capsicum 1
  6. Cauliflower florets 1/2 cup
  7. Oil to tbsp
  8. Ginger garlic paste 1)2 teaspoon
  9. Fennel seed 1/4 teaspoon
  10. Eggs 2
  11. Chilli powder 1/2 teaspoon
  12. Salt to taste
  13. Coriander leaves 1 fistful


  1. Cut Parotta into small pieces.
  2. Heat oil in a Kadai and add fennel seed and chopped onions.
  3. Saute for 3 minutes. Add chopped tomatoes and saute well till it's mushy.
  4. Add ginger garlic paste and saute till the raw smell disappear.
  5. Add chili powder and saute for few minutes. Add salt to taste.
  6. Add all the chopped vegetables to it and stir fry.
  7. When it is partly cooked ,break eggs and add to it.
  8. Add leftover parotta pieces and mix well till the eggs and vegetables are coated well. Cover and cook for 5 minutes.
  9. Finally add chopped coriander leaves and it's ready to consume.
