Ingredients to make Alfredo Chicken Penne Pasta

  • olive oil 1 tablespoon
  • garlic cloves(minced) 3
  • chicken broth/stock 1 cup
  • Heavy whipping cream 1 cup
  • Uncooked penne pasta (any pasta can be used) 1/2 pound

  • Boneless, skinless chicken breast, cut into small pieces 1 pound

How to make Alfredo Chicken Penne Pasta

  1. In a large vessel bring 4 - 6 quarts of water to a rolling boil, add salt to taste. Add the uncooked pasta to boiling water. Stir gently.Return to a boil. For authentic pasta, boil uncovered, stirring occasionally for 11 minutes.
  2. Remove from heat, drain the excess water in a colander.
  3. Take a large pot, heat oil and brown the pieces of chicken.
  4. Add in garlic and continue to cook until garlic is fragrant.
  5. Add in chicken broth/stock, heavy whipping cream, pasta, cream cheese, butter, Italian seasoning.
  6. Bring to a boil and then reduce to a simmer to cook for 15 minutes.
  7. Remove from heat and stir in Parmesan. Serve hot. Garnish with fresh Parsley and Basil.

My Tip:

1) Do not over boil the pasta, it should be tender only. 2)For leftovers, heat stove top, microwave does not preheat the Alfredo sauce properly.
