Karela (bitter gourd) when cooked with tomatoes gives a nice flavour as tomato cuts its bitterness and makes it easy to eat. This sabji goes well with roti and chawal both.

Ingredients Serving: 4

  1. Bitter gourd (karela) - 250 gms
  2. Tomatoes - 2
  3. Onions - 1
  4. Haldi - 1/2 tspn
  5. Kashmiri red chilli powder - 1/2 tspn
  6. Jeera powder -1/4 tspn
  7. Dhaniya powder - 1/4 tspn
  8. Kasuri methi -1/2 tspn
  9. Garlic leaves - 5
  10. Ginger - 1/2 tspn
  11. Salt
  12. Water for boiling and gravy


  1. Cut karela into big pieces.
  2. Boil the karela in water and salt in pressure cooker for 1 whistle.
  3. Now stir fry the boiled karela in little oil till it turns golden .
  4. Allow it to cool, remove the pulp and seeds.
  5. In a mixer, add these seeds, tomatoes, ginger and garlic
  6. Grind them to make a smooth paste. Keep it aside
  7. Now heat oil, add bayleaf, cumin seeds. When they splutter, add chopped onions.
  8. When onions becomes translucent, add the prepared tomato paste and cook for 5 min.
  9. Add haldi, kashmiri red chilli, dhaniya powder, kasuri methi, jeera powder, and salt
  10. Cook the masala for another 5 min and then slowly add water
  11. Bring it to one boil and then add the fried karela. Cover and cook for 10 min.
  12. Adjust water accordingly. Sprinkle some lime juice or aamchur powder(optional).
  13. Karele tamatar ki sabji ready to serve.
