ABOUT AJI AMARILLO SAUCE / PERUVIAN YELLOW CHILLI SAUCE RECIPE

This sauce is made with yellow chillies and used in lot of Peruvian dishes and also as an accompaniment with the snacks.

Ingredients Serving: 10

  1. Yellow Peruvian chillies ... 1 cup
  2. Sugar .......... 1 tbsp
  3. Vinegar ...... 1 tbsp
  4. Salt ......... to taste
  5. Oil ........... 3-4 tbsps

Instructions

  1. Slit the chillies and remove the seeds.
  2. Boil them with a little salt for 8-10 minutes until they are cooked.
  3. Drain the water. Add the sugar, vinegar and grind the chillies to a paste.
  4. Heat the oil and allow it to cool. Add the ground chilli paste and adjust the seasoning.
