ABOUT Rajasthani Lal Mass RECIPE

Lass Mass is a traditional Rajasthani spicy mutton recipe made with yogurt, garlic and lots of dry red chillies.This non-vegetarian recipe tastes exotic and has a unique flavour of pure ghee. Usually served on special occasions.Try this simple recipe at home and surprise your loved ones.

Ingredients Serving: 4

  1. 1 kg mutton
  2. 100 gram Yogurt
  3. 2 teaspoon turmeric powder
  4. 2 teaspoon cumin powder
  5. 2 teaspoon coriander powder
  6. 6 dry kashmiri red chilli (soaked in water)
  7. 4 tablespoon ghee
  8. 5-6 green cardamom
  9. 2 INCH CINNAMON STICK
  10. 3-4 cloves
  11. 2 Bay Leaves
  12. 1 teaspoon garam masala powder
  13. 2 tablespoon ginger garlic paste
  14. 5-6 middium sized onion, thinly sliced
  15. Salt to taste
  16. 3 cup water
  17. Coriander sprigs for garnishing

Instructions

  1. 1. Grind the soaked kashmiri red chillies into a fine paste in a mixer grinder.
  2. 2. In a large mixing bowl,add mutton,yogurt,cumin powder,coriander powder,1 tablespoon ginger garlic paste and the dry red chilli paste which we prepared in the beginning.
  3. 3. Mix everything well and set aside to marinate for 30 minutes.
  4. 4. Add ghee in a Kadai, once hot, add cinnamon sticks, green cardamom, cloves and bay leaves and saute for 2-3 minutes. Now add onions and saute till they turn light brown in colour.
  5. 5. Add remaining ginger garlic paste and saute for a minute.
  6. 6. Then add the marinated mutton to the onions and saute on high heat for 2-3 minutes.
  7. 7. Now add the required salt and water into the Kadai.Stir well.
  8. 8. Now bring to a boil and transfer this whole mixture in a pressure cooker.
  9. 9. Now close the lid and pressure cook for 5 whistles or until the meat is cooked.Turn off the heat and let the steam escape all by itself.
  10. 10. When done,open the lid of the pressure cooker and add garam masala powder into it. Give a quick stir before removing from heat.
  11. 11. Transfer to a serving bowl.
  12. 12. Garnish it with coriander sprigs.
  13. 13. Rajasthani Lal Mass is ready to be served.
  14. 14. Serve Rajasthani Lal Mass with roti or Phulkas.
