ABOUT Hot Chilli Garlic Sauce RECIPE

Hot Garlic Sauce predominantly goes very well with Chinese or Thai cuisine or to pep up bland less spicy food. It is made from fresh chillies and garlic. Select the variety of red chillies according to your tolerance level. This sauce is more of a dipping sauce. It is more prominent for its fiery taste rather than the colour only. Stir frying with just a bit of this hot garlic sauce sends your dish to the next level. It is also used as a dipping sauce for tempuras , spring rolls etc.

Ingredients Serving: 8

  1. 250 grams fresh red chillies (should neither be too hot or mild)
  2. 1/2 to 3/4 cup oil; use a mix of regular cooking oil, olive oil and sesame oil
  3. 6 to 8 cloves of garlic
  4. Salt to taste
  5. 1 to 2 teaspoons of white vinegar
  6. 1 to 2 teaspoons of soya sauce

Instructions

  1. Rinse, remove stalks and deseed the red chillies and chop roughly.
  2. Remove the skin from garlic and chop roughly
  3. Blend the chillies and garlic using a bit of water till a thick coarse textured paste is formed.
  4. In a wide pan warm the oil and saute the chilli garlic paste on medium flame.( Take care as the water droplets may splutter all over)
  5. Once water dries up, add salt .
  6. Saute on low flame till rawness of chillies goes .
  7. Add the vinegar and saute further till oil floats.
  8. Once the chilli sauce is done and oil floats, put off the flame
  9. Cool and transfer to a jar.
  10. Store in the fridge for 3 to 4 months or freezer for a year.
  11. For consumption take out small serving portions, mix a little of soya sauce and serve as accompaniment with tempura, spring rolls, etc.
