About Roasted tomato gazpacho Recipe

Roasted tomato gazpacho is a flavorful spanish tomato soup. This is served chilled or cold and a great soup for traditional summer.

Roasted tomato gazpacho

Ingredients to make Roasted tomato gazpacho

  • 5 medium size tomato
  • 1/2 cup chopped onion
  • 1 Red bell pepper
  • 2 garlic pods
  • 2 bread pieces
  • 1/3 cup basil
  • 1/2 cup chopped cucumber
  • 1 tsp green chili paste
  • salt as per taste

How to make Roasted tomato gazpacho

  1. Preheat oven at 450 F. Slice the tomato, red bell pepper, onion, garlic.
  2. Place all cut veggies in roasting pan and mix together.
  3. Roast these at 450f temperature for about 40 min.
  4. Roughly chop cucumber, cut bread pieces.
  5. After 40 minutes let them cool down for 10 minutes.
  6. Take a grinding jar and add all the ingredients including roasted vegetables.
  7. Grind them till smooth paste.
  8. Garnish with green coriander and serve cold.
