ABOUT Green Gazpacho RECIPE

Gazpacho is a summer drink from the Andulasian region and finds a place in every meal from Spain and Portugal. It is basically bread, onion, garlic, a fruit and vegetable, bell peppers, cucumber, salt and lemon juice. I have made slight changes to include zucchini, spinach, and coriander to make it green.

Ingredients Serving: 2

  1. White sandwich bread slices 2
  2. Spinach, chopped 2 cups
  3. Coriander 1/3 cup
  4. Bell pepper 1/3 cup
  5. Pear medium 1
  6. Spring onion, greens and whites separated 2 springs
  7. Onion 1/3 cup
  8. Cucumber 1/2 cup.
  9. Zucchini 1/4 cup
  10. Long red chillies 1 teaspoon
  11. Lemon juice 2 tablespoons
  12. Salt to taste
  13. Sugar 2 teaspoons


  1. Wash and chop all vegetables and fruit, spinach and coriander.
  2. Chop chillies into very small pieces and keep aside.
  3. Place all ingredients except chillies and spring onion greens.
  4. Blend into a smooth paste with a little water.
  5. Test for salt. Adjust as per taste.
  6. Chill for a couple of hours.
  7. Pour into glasses.
  8. Sprinkle red chillies and spring onion greens on top.
