ABOUT Spanish Gazpacho Soup RECIPE

Easy, no cook and packed with nutrients, this soup is enjoyed at room temperature or chilled in summers!

Ingredients Serving: 6

  1. 200gram chopped cherry tomatoes
  2. 4-5 chopped garlic pearls
  3. 1 cucumber diced
  4. 1 large red bell pepper chopped
  5. 5-6 basil leaves
  6. 1 green chilli / you may use chilli flakes
  7. to taste Salt
  8. 1 tablespoon freshly crushed black pepper
  9. Juice of 1 lemon
  10. 1 teaspoon avocado or olive oil
  11. 4-5 tablespoon chopped spring onion greens and cucumber peels to garnish

Instructions

  1. All you need to do is to blend together all the ingredients (of course leaving behind some tomatoes for garnishing)
  2. Blend the tomatoes into a purée first
  3. Follow it up by adding in the cucumber, basil and bell peppers
  4. Add the seasonings plus the garlic
  5. Transfer into a large bowl and add the oil
  6. Check the seasoning once again and adjust accordingly
  7. Refrigerate for an hour before serving
  8. Serve chilled garnished with diced cherry tomatoes, spring onions greens and some cucumber peels
  9. Enjoy!
