ABOUT Bharli Karli (stuffed Karela) RECIPE

Many variations are seen with the stuffing for Karela. This is my favorite one. The same stuffing can be used for okra/ladyfingers. Though the procedure may look tedious, but it's one of the easiest to make.

Ingredients Serving: 3

  1. 6 bittergourds (small variety)
  2. 3 tbsp gram flour (Besan)
  3. 3 tbsp Sesame seeds
  4. 3 tbsp dry Coconut powder
  5. 1 tsp cumin seeds
  6. 1 tsp Fennel seeds
  7. 2 tsp Red Chili powder
  8. 1/4 tsp turmeric powder
  9. 1 tbsp coriander powder
  10. 1 tsp cumin powder
  11. 1/2 tsp fennel seed powder
  12. 1/2 tsp - 3/4 tsp amchur (dry mango powder)
  13. 1 tsp garlic powder
  14. 2-3 tbsp roasted groundnuts
  15. Salt to taste
  16. 1 tsp fine sugar
  17. Oil
  18. 1 tsp mustard seeds
  19. 1 tsp cumin seeds
  20. Dash of hing (asafoedita)

Instructions

  1. Scrape any black skin on bittergourd. Keeping the ends intact, slit them vertically to remove internals seeds very carefully. (Do not cut through and through).
  2. Wash and apply salt liberally insides the bittergourds. Leave them aside for at least 30 minutes or more. Wash them again to remove salt. Drain all water making sure the insides of bittergourds is dry.
  3. In a skillet, dry roast besan till fragrant (about 5-8 minutes). Remove to a plate/bowl. Wipe clean pan and dry roast sesame seeds, cumin seeds, fennel seeds, and coconut till very lightly colored. Remove to a plate and cool.
  4. Coarsely grind them along with groundnuts in food processor.
  5. Combine Besan with all dry powders and sugar. Add the ground mixture to Besan. Add salt to taste. Mix well. Stuffing is ready.
  6. Fill the bittergourds with the stuffing and tie them well with thread.
  7. Heat oil in pan. Add mustard seeds. As soon as they start popping, add cumin seeds and hing. Drop the bittergourds and cover the pan with lid.
  8. Cook on low heat turning them over at intervals till they are evenly browned. Last few minutes of cooking, remove the lid and fry uncovered. Remove to serving plate.

you can skip besan as well as groundnuts with daliya (roasted gram )

hi, can v do this recipe without the groundnuts as my son is allergic.what can be be used instead of groundnuts
