Ingredients Serving: 4

  1. Brinjal – 3
  2. Tamarind – 2 lemon size
  3. Green chili – 4
  4. Ginger – small piece
  5. Water – 500ml
  6. Musturd – ¼ tsp
  7. Bengal gram – ½ tsp
  8. Urad dhal – ½ tsp
  9. Gingelly Oil – 2 tsp
  10. Salt – to taste
  11. Asafoetida - a generous pinch
  12. Coriander leaves - few

Instructions

  1. Wash the brinjal and rub with oil.
  2. Roast the brinjal in gas fire and keep turning until all sides are cooked.
  3. Let it cool.
  4. Peel the skin and mash the brinjal.
  5. Blend the tamarind in water and make it as a juice with 500ml water. Now all the ingredients are ready to be cooked.
  6. Take pan and add oil and hing.
  7. Add mustard, Bengal gram dhal, urad dhal and fry for a min
  8. Add ginger and let it fry.
  9. Add green chili and let it fry.
  10. Switch off the gas.
  11. Add the tamarind juice.
  12. Add roasted and mashed brinjal
  13. Add salt and mix nicely.
  14. Garnish with coriander leaves.
