ABOUT Mera Pitha RECIPE

This Mera Pitha is a traditional dish from Assam made with roasted rice flour. This is a kind of steamed pitha made for breakfast or snack which is almost a lost recipe now a days. They tastes best with freshly ground rice flour but I use readymade flour. These mara pithas are generally enjoyed with loval chicken gravy or bhuna mutton.

Ingredients Serving: 10

  1. Rice Flour 2 cups
  2. Salt 1 teaspoon
  3. Boiling water 4 cups approximately

Instructions

  1. In a heavy bottomed pan dry roast rice flour in medium heat until you get a nice roasted flavor.
  2. It will take about 10 minutes to roast the flour. Roast in medium low heat so that the colour of the flour doesn't change.
  3. Transfer to a mixing bowl.
  4. Boil 4 cups of water.
  5. Add salt to the flour and mix.
  6. Add the boiling water 1 cup at a time and mix with a spatula.
  7. Slowly add more water and mix with spatula. As you are using very hot water , you can't use hand at this point.
  8. When the mixture cools a little bit , start kneading the mixture with your hand to form a dough ( nor too soft or too hard)
  9. Knead for 6 to 10 minutes to make the dough smooth.
  10. Take a lemon size dough and make the shape of mera pitha using your palm. ( diamond shape)
  11. In a steamer boil sufficient water to steam the pitha.
  12. Place the pithas in the steamer.
  13. Steam them for about 20 minutes.
  14. Take out from steamer and rinse them in cold water to separate the pithas from one another.
