Vrat special - Delicious kheer made from Sweet potatoes

Ingredients Serving: 4

  1. 1/2 litres full fat milk
  2. 120 g sweet potato
  3. 3-4 tbsp sugar- adjust
  4. 1/4 teaspoon cardamom powder
  5. 8-10 Cashews
  6. 2 teaspoon Ghee
  7. Few saffron strands
  8. 1/4 teaspoon rose water - optional

Instructions

  1. Pressure cook sweet potato until just done. Don't overcook else it will become mushy. Peel and grate sweet potato. Keep it aside
  2. Heat milk in a vessel and bring to boil
  3. Add grated sweet potato and mix well
  4. Add saffron and mix well. Cook until milk reduces to half
  5. Add sugar and mix well
  6. Add cardamom powder and rose water and mix well
  7. Heat ghee in small pan.Fry cashews until golden brown
  8. Add nuts to kheer and mix. Serve kheer warm or cold
