Ingredients Serving: 4

  1. Poha / Flatten Rice - 2 cups
  2. Clarified Butter / Ghee - 2 tbsp
  3. Cashew nuts - 5-6
  4. Kismis / Sultana - 8-10
  5. Bay leaf - 1
  6. Dried Chilli - 1
  7. Boiled potato (cut into diced) - 1/2 cup
  8. Cauliflower (chopped into pieces) - 1/3 cup
  9. Diced Carrot - 1/3 cup
  10. Chopped beans - 1/4 cup
  11. Green peas - 1/4 cup
  12. Turmeric powder - 1/4 tsp
  13. Chopped green chilli - 1 tsp (optional)
  14. Sugar - 1 tsp
  15. Salt - as per taste

Instructions

  1. Wash the poha 2-3 times. **be gentle during the washing time. Try not to squeeze otherwise you'll break the poha.**
  2. Soak the washed poha in the water for 2-3 minutes. **Not more than that, otherwise you'll get mushy poha.**
  3. Drain it and spread into a absorbent paper.
  4. Let it dry a bit.
  5. In a wide frying pan heat the ghee.
  6. Fry the cashews and kismis and set aside.
  7. In the same frying pan add bay leaf and dry chilli.
  8. Add cauliflower and carrot.
  9. Saute them until they get bit soft and cooked.
  10. Then add beans and green peas.
  11. Saute for another couple of minutes.
  12. Add boiled potato and salt and sugar.
  13. Put the turmeric powder and green chilli.
  14. Finally add dried poha and fried cashew and Kismis.
  15. Get mix everything nice and gently.
  16. It's ready to serve.
