Poha pulao is made with addition of lots of veggies which are healthy for the kids . It is a great tiffin option too as it is ready within minutes .

Ingredients Serving: 2

  1. Poha or flattened rice flakes a big bowl
  2. Assorted veggies of your choice. I used carrots potatoes and capsicum. Finely diced .
  3. Onion 1 finely chopped
  4. Green chillies 2 finely chopped
  5. Asafoetida a pinch
  6. Tomatoes 1 finely chopped
  7. Salt as per taste
  8. Lemon juice 1 tablespoon
  9. Mustard seeds 1 teaspoon
  10. Oil 2 tablespoon
  11. Salt as per taste


  1. Soak the poha in water for a minute or two and keep it on a sieve so that all water is drained.
  2. Dice the veggies evenly and blanch them for 3 minutes. Keep aside
  3. Heat oil in a pan
  4. Add mustard seeds and let crackle
  5. Add asafoetida powder and onion . Cook till onions are golden brown
  6. Add green chillies and tomato. Cook for a few minutes
  7. Add the veggies add some salt and cook till for a minute
  8. Add the poha and remaining salt and cook on a slow flame for a few more minutes. Add lime juice and coriander and switch off heat.
  9. Serve with curd
