Quill fry / Kaadai fry

Ingredients to make Quill fry / Kaadai fry

  • Quill or kaadai - 10 numbers ( 1 kg)
  • To make paste:-
  • chilli powder - 2 tbsp
  • coriander powder -2 tsp
  • turmeric powder -1 tsp
  • cumin powder-1 tsp
  • fennel powder -1 tsp
  • Garam masala - 1 tsp
  • lemon juice from 2 medium size
  • ginger garlic paste -4 tsp
  • oil-1 tbsp
  • salt to taste.
  • oil to fry.
  • To fry 1-1 .1/2 cup sunfloweroil.

How to make Quill fry / Kaadai fry

  1. CLEAN,REMOVE THE SKIN OF QUILL / KADAI THEN RINSE 4 TIMES IN ENOUGH WATER.
  2. FINALLY ADD TURMERIC POWDER IN WATER AND RINSE AGAIN.
  3. DRAIN IT.
  4. PUT SLIT IN BREAST PART.
  5. IN A PLATE ADD CHILLI,CORIANDER,TURMERIC, CUMIN,FENNEL,PEPPER POWDERS,GARAM MALASA AND SALT TO TASTE.
  6. ADD GINGER GARLIC PASTE AND PINCH OF FOOD COLOUR(OPTIONAL)MIX WELL.
  7. ADD LIME JUICE AND OIL,MAKE A PASTE.
  8. APPLY THE MASALA MIX TO ALL KADAIS.
  9. NOW READY,MARINATE FOR ATLEAST FOUR HOURS OR MARINATE AND KEEP IN FRIDGE PREVIOUS DAY ITSELF.
  10. REMOVE THE MARINATED QUILL FROM FRIDGE AND KEEP OUTSIDE, ONE HOUR BEFORE ITSELF.
  11. HEAT OIL ,TRANSFER THE QUILL GENTLY.
  12. FRY TILL GOLDEN BROWN.
  13. NOW QUILL OR KADAI FRY IS READY.
