Eggless potato souffle cupcakes

Ingredients to make Eggless potato souffle cupcakes

  • 1 Big size potato boiled and mashed
  • 1 cup corn boil
  • 2 to 3 tbsp all purpose flour
  • 1 cup milk
  • 1 cup Cheese
  • 1 tbsp butter
  • 2 tbsp coriander chopped
  • 1 tbsp oregano
  • 2 tbsp chilli flack
  • salt to taste
  • 1 sachet eno

How to make Eggless potato souffle cupcakes

  1. Take potato, all purpose flour, chilli flack, oregano, corn and coriander in a bowl mix it well.
  2. Then add butter, cheese and milk and mix all ingredients well
  3. After mixing add one Eno sachet in the batter mix well.
  4. After adding eno souffle mixer becomes light and fluffy.
  5. Now grease muffin tray
  6. Fill the cupcake papers about 2/3 full
  7. Back the mixer at 180°c for 30 minutes
  8. After backing cool souffle for 5 minutes.
  9. Then put cheese, coriander on top for garnishing.
