ABOUT Chawal Ki Kheer (Rice Pudding) RECIPE

Kheer is one of those classic desserts that don't require an occasion. My mother learnt making this, prior to her marriage from her mother. This is an absolutely delicious recipe which will surely make you win everyone's heart.

Ingredients Serving: 2

  1. Full fat milk 1/2 litre
  2. Small grained rice 2 tbsp
  3. Sugar 3 tbsp
  4. Cardamom powder 1/2 tsp
  5. Almonds 8
  6. Cashews 8
  7. Raisins 15
  8. For Garnishing:
  9. Pistachios 4, sliced
  10. Almond flakes 1 tsp
  11. Saffron strands 4

Instructions

  1. Rinse the rice thoroughly till the water runs clear of starch.
  2. Soak the rice in enough water for 30 minutes. Set aside.
  3. Heat milk in a heavy bottomed pan and let it come to a boil.
  4. Add sugar and boil for 2 minutes.
  5. Meanwhile, drain the rice and keep aside.
  6. Reduce the flame and add the rice and give it a stir.
  7. Let the rice grains cook.
  8. The whole process of cooking takes about 30-35 minutes on a low flame.
  9. Keep stirring every once in a while so that no lumps are formed.
  10. While stirring make sure you do it from the bottom and the sides as well.
  11. Meanwhile, in a microwave safe bowl take the almonds and cover it with water.
  12. Microwave on high for 1 minute.
  13. Remove the bowl and let the almonds cool.
  14. Once cooled, peel them.
  15. Chop them along with the cashews.
  16. Rinse the raisins and keep aside.
  17. When the rice is almost done, add the almonds, cashews and raisins.
  18. Cook further till the rice grains are completely cooked and you reach the desired thickness.
  19. Once the rice is cooked, add cardamom powder and mix well.
  20. Leave it on for another 10 minutes till it reaches a creamy consistency.
  21. Taste for sweetness.
  22. Transfer the kheer to serving bowls.
  23. Garnish with pistachios, almond flakes and saffron strands.
  24. Serve hot, warm or chilled. Its delicious in every way.
