ABOUT Indian Nougat RECIPE

Nougat is an Italian recipe .Here it is been twisted with Indian taste of adding Cardamom, rose water and rose petals with the regular nougat recipe.

Ingredients Serving: 10

  1. Honey 3 / 4 cup
  2. Sugar 1/2 cup
  3. Egg white 1
  4. Salt a pinch
  5. cardamom 4 number with 1 1/2 teaspoon sugar .
  6. Rosewater 2 teaspoon
  7. Lemon Zest 1 tbsp
  8. roasted Almonds 1/2 cup
  9. Roasted Pistachios 1/2 cup
  10. Raisins 1/2 Cup
  11. Dried rose petals 1 fistful

Instructions

  1. Line a square tin with parchment paper
  2. Roast Almond and Pistachio until crisp.
  3. Keep the roasted Almonds and pistachios in a warm place until ready to add at the end. This makes it easier to mix them in.
  4. Pour honey ,sugar with cardamom powder in a heavy bottom pan and mix well till it forms silky smooth syrup.
  5. It takes nearly 20 minutes to achieve this consistency. Switch off the flame and keep it aside.
  6. whisk egg white with a Pinch of salt till like a shaving foam texture.
  7. Place the pan on gas top and keep on low heat
  8. Gradually add whipped egg whites little by little to the sugar and honey mixture and mix thoroughly.
  9. Continue cooking the mixture over low heat ,stirring constantly with a spatula until the mixture forms Ribbon consistency and the pattern remains for few seconds.
  10. This will take 20 to 25 minutes to achieve this consistency.Add Rose water and mix thoroughly.
  11. Add rose petals , lemon zest, roasted nuts and raisins and stir to incorporate evenly.
  12. Transfer the mixture to the prepared tin and spread evenly with the help of spatula.
  13. Place a parchment paper on top and gently press the mixture down with the help of Katori.
  14. Allow them to sit at room temperature until cool,firm and ready to cut.
  15. Cut using a serrated knife and wrap it up with the parchment paper and store in an airtight container.
  16. Fusion Indian Nougat with cardamom and rose water flavour is ready to consume.
