A very popular masala dosa recipe from south India which is made by using dosa batter and potato masala

Ingredients Serving: 5

  1. For dosa batter
  2. 2 cups dosa rice or sona masori rice
  3. 1 cup urad dal
  4. 1 tsp channa dal/bengal gram
  5. 1 tsp fenugreek seeds/methi seeds
  6. Salt to taste
  7. Water as required
  8. Oil for applying on dosa
  9. For the potato masala filling
  10. 5 potatoes medium sized
  11. 3 tbsp oil
  12. 1 tsp mustard
  13. 1 tsp turmeric
  14. 1 tsp cumin seeds /zeera
  15. 3 green chilles chopped
  16. Few curry leaves
  17. 1 cup roughly sliced onion
  18. 1/2 tsp urad dal
  19. 1/2 tsp channa dal
  20. Salt to taste
  21. 1/4 cup coriander leaves


  1. Wash rice and urad dal well,to it add methi seeds, channa dal and good amount of water, and soak it about 8hrs
  2. Drain out the soaked water from all the ingredients
  3. Mix all the ingredients that is urad dal, rice, methi, channa dal
  4. Blend all the mixed ingredients into a fine paste/batter by adding very little water if required
  5. Mix the whole batter well
  6. Allow the batter to ferment overnight
  7. Next day to the batter, add salt and mix well.check the batter consistency, batter should not be too thick nor too thin
  8. For potato filling
  9. Firstly wash potatoes, boil the potatoes in water by adding little salt and pinch turmeric
  10. Once boil cool nd peel of the skin of potatoes,chop it or mash
  11. In a seprate pan add oil and heat it
  12. Add mustard, cumin,allow it to splutter, add channa dal and urad dal, next add curry leaves and green chilles chopped fry for a minute
  13. Next add sliced onion and saute till onions become soft
  14. Add salt and turmeric and mix well, add boiled potatoes mix well and cook for 5 min
  15. Lastly add the chopped coriander leaves and keep it aside to fill the dosa
  16. For making dosa
  17. Heat the griddle/tawa well, take an onion slice and brush it on the tawa
  18. Take a ladle full of dosa batter and drop it at the center and stand spreading the batter in a circular way evenly and cook
  19. Smear some oil on surface and corners & cook for few seconds on medium flame
  20. Add the potato stuffing at the center, fold it and remove from tawa
  21. Serve with chutney, sambhar
