ABOUT Vada Pav RECIPE

Vada pav also known as the Indian burger is the lifeline of Mumbaikars.Though i’m Not a big fan of batata Vada /Aloo Bonda / Bhajiyas but when these are sandwiched between freshly home baked paves along the layers of spicy and sweet Gralic,green chutneys..Please count me in ! My Cold morning breakfast Pleasure would be this humble vada Pav , a common man’s burger as I would call is not only flavorful but yet so satisfying.

Ingredients Serving: 8

  1. For Batata Vada : 2 tbsp : Oil
  2. 1/2 tsp : Mustard Seeds
  3. 1 tbsp : Garlic minced
  4. 2 no : Green Chillies minced
  5. 1/2 tsp : Turmeric powder
  6. 2 cups : Gram Flour
  7. 6 medium : Potato (boiled,mashed)
  8. 2 tbsp : Rice Flour
  9. Salt to taste
  10. Oil for Deep frying
  11. For Dry Garlic chutney : 1/2 tsp : Oil
  12. 6 to 8 : Garlic cloves
  13. 3 tbsp : Desicated Coconut
  14. 3 tbsp : Peanuts
  15. 2 tbsp : Sesame Seeds
  16. 1 tsp : Cumin seeds
  17. 1 tbsp : Coriander seeds
  18. 2 tsp : Red Chilli powder
  19. Salt to taste
  20. For Green chutney : 1 cup : Coriander leaves
  21. 1/2 cup : Mint leaves
  22. 3 no : Green Chillies
  23. 1/4 tsp : Black Salt
  24. 1/2 tsp : Sugar
  25. 2 tsp : Lemon juice
  26. Salt to taste
  27. For Dates and Tamarind chutney : 85g seedless tamarind
  28. 80g seedless dates
  29. 40g grated jaggery (or brown sugar)
  30. 450ml water
  31. ½ tsp coriander seeds, crushed
  32. ½ tsp cumin seeds, crushed
  33. ½ tsp dry ginger powder
  34. ½ tsp red chilli powder
  35. 1 tsp black salt, or rock salt
  36. 8 : Pav Buns

Instructions

  1. Let's begin by preparing chutneys. For Green chutney : Add the fresh coriander, fresh mint and green chillies to a blender and grind them to a smooth paste adding little water if required.
  2. Add the black salt and sugar. Transfer the chutney to a bowl, add the lemon juice and mix well.
  3. For the Dry Garlic Chutney: To a pan, add in the oil and garlic. Cook the garlic until golden specks appear.
  4. Remove the roasted garlic into a bowl.. To the same pan, add the peanuts and roast until halfway done.To the peanuts, add the coconut, sesame, cumin, coriander and roast in low flame until everything turns golden.
  5. Turn off and transfer them to a bowl. Mix Red Chili and Salt, let it cool completely. Now grind to a coarse powder and dry garlic chutney is ready to use.
  6. For the date and tamarind chutney : In a pan, place the tamarind, dates and water and cook for about 10 mins on a gentle heat.
  7. Add the jaggery, stir and bring to the boil. Once the jaggery has dissolved, the mixture will start to thicken.
  8. Stir in all the spices and salt and then leave to simmer for about 20 minutes.Remove from the heat and leave to cool.
  9. Sieve the chutney mixture into a blender and grind until the chutney is smooth. Add a little water if required.
  10. For Batata vada :Heat a pan, add in the oil. Once hot add in mustard seeds and allow them to splutter.
  11. Next stir in garlic, green chili, ginger and turmeric. and cook them for a minute. Later add in the boiled, mashed potatoes, salt and mix them well. Cook for a minute or two. Transfer to a bowl and let cool completely.
  12. Divide the potato mixture into 8 round portions.
  13. In a bowl, add in the gram flour, rice flour, salt and make a thick and flowy batter using water as required. Let batter rest for 15 mins.
  14. Dip the vadas in batter and deep fry in medium hot oil until golden and then take down into kitchen tissue.
  15. For assembling Vada Pav: Take a Pav, cut it in the middle halfway through, smear the green, date and tamarind chutney on the insides of the pav.Sprinkle dry garlic chutney generously, then place in the Batata vadas.
  16. Serve hot and indulge yourself in its flavors !
