CHITRANA (LEMON RICE )

Ingredients to make CHITRANA (LEMON RICE )

  • Leftover rice 2 cups
  • lemon juice 3 tablespoons
  • urad dal 1 teaspoon
  • chana dal( Bengal gram lentils) one teaspoon
  • black mustard seeds half teaspoon
  • Dried red chilli 2
  • curry leaves 10 to 12
  • cashews 8 - 10
  • asafoetida 2 pinches
  • turmeric powder 1 teaspoon
  • cumin one teaspoon
  • salt as per taste
  • Refined oil as required

How to make CHITRANA (LEMON RICE )

  1. In a bowl mix 2 table spoons of lemon juice, oil and salt in the rice and keep aside
  2. now heat oil in a frying pan and add mustard seeds
  3. when it starts crackling add chana and urad dal
  4. Fry till Golden in colour
  5. now add cashews, cumin, curry leaves ,asafoetida and dried red chillies
  6. Combine well
  7. now add turmeric powder and one fourth cup of water in a separate bowl
  8. Add this mixture
  9. let it simmer for 5 -6 minutes ,
  10. Let the water evaporate, add remaining lemon juice and turn off the gas
  11. combine this mixture with the rice
  12. it is ready to serve
  13. Serve it with curd , pickle,and papar

My Tip:

Freshly made rice can be used
