Cheese Rice pudding

Ingredients to make Cheese Rice pudding

  • 1/2 cup or 100 grams Basmati tukda rice
  • 1 litre full cream milk
  • 1 1/2 cup sugar
  • Deseeded cardomom, a few
  • Blanched almonds and pistachios
  • Few strands of saffron
  • 1 cup grated amul cheese cubes/say 3cubes

How to make Cheese Rice pudding

  1. Cook rice well so that you are able to grind.
  2. Boil milk and keep ready too.
  3. Cool cooked rice a little and use hand blender to grind well with no water if any left while cooking.
  4. Soak a few strands saffron in 2 tspn milk keep aside.
  5. Now add the ground rice to the warm milk (not too hot) Mix very well and let cook.
  6. Stirring for five to ten minutes add the sugar slowly mix well on slow flame.
  7. Cook another approximate ten minutes as it starts thickening, add saffron.
  8. Mix and add the almonds & pistachio chopped.
  9. Bring down from stove and keep stirring to cool to almost room temperature
  10. Add grated cheese to this, useing a hand blender again.
  11. Pour out into serving dish and garnish with few dry fruits.
  12. Cool in fridge
  13. Serve cold

My Tip:

Rice to be ground well. Option to add sugar in warm milk too and then the ground rice. Add cheese only when cool.
