Ingredients Serving: 3

  1. 1 tbsp oil
  2. 1 tbsp chopped ginger
  3. 1 1/2 tbsp Chopped garlic
  4. 1/4 Green capsicum
  5. 1/4 yellow capsicum
  6. 3 cups Vegetable stock
  7. 1 Cup mushrooms ( finely sliced )
  8. 1 Green chilli ( finely chopped )
  9. 1/4th Cup Green Sprouts
  10. 1/4th Cup cabbage (shredded)
  11. 1 carrot (straws)
  12. 1 1/2 tbsp Soya Sauce
  13. 1 1/2 tbsp vinegar
  14. 1 tbsp Red chilli sauce
  15. Salt and pepper to taste
  16. Few spinach leaves
  17. 1 1/2 tbsp cornflour
  18. water

Instructions

  1. Heat oil in a wok and add ginger and garlic to it. Saute it for for few seconds.
  2. Now, add green and yellow bell peppers and stir fry for 30 sec.
  3. Add vegetable stock and let it start boiling.
  4. Now, add mushrooms, green chilli, green sprouts, shredded cabbage, carrot straws, soya sauce, vinegar, red chilli sauce, salt, pepper and let boil for around 2 mins.
  5. Roughly tear some spinach leaves and add it to the boiling soup.
  6. Mix stock and cornflour in a bowl and add it to the soup.
  7. Boil the soup for another 2 -- 3 mins and the soup is ready.
  8. Hot and Sour Soup is ready to serve hot and garnish with some coriander leaves.
