Quick, easy and mouthwateringly good. This carrot and ginger soup is perfect for chilly afternoons. This soup is not only a powerhouse of nutritional benefits but also tastes delicious.

Ingredients Serving: 3

  1. 2 Potatoes, boiled & cubed
  2. Salt and Pepper to taste
  3. 1/8th tsp Vinegar
  4. 1/2 tbsp Ginger, chopped finely
  5. 1 Carrot, sliced thinly
  6. Spinach leaves, chopped
  7. 1/4 tbsp Butter


  1. In a mixer bowl, add the finely chopped boiled potatoes and grind it into a smooth puree.
  2. In a saucepan, heat the butter.
  3. Once the butter is hot, add the finely chopped ginger and saute it for a few seconds.
  4. Add the potato stock. Strain it well to avoid lumps of potato.
  5. Add water to the stock as it is very thick.
  6. Season with salt and pepper and let the soup come to boil before adding the veggies.
  7. Once the soup comes to a complete boil, add the spinach leaves and the carrots and give it a stir.
  8. Add the boiled corn, oregano and vinegar to the soup.
  9. Mix cornflour with water and add it to the soup and give it a good boil. (Omit this step if you do not want the soup to be thick).
  10. The delicious carrot and ginger soup is ready to be served.
