Amla is a rich source of vitamin c. In winters amla is available in plenty. Amla launji is an instant version Indian pickle which is sweet, spicy and tangy. We can eat it in more quantity thus enjoying the benefits of amla.

Ingredients Serving: 3

  1. Amla {Indian gooseberries}- 250 grams
  2. Oil - 1 tablespoon
  3. Sugar - 1/4 cup
  4. Turmeric Powder - 1/2 teaspoon
  5. Red chilli powder - 1/2 teaspoon
  6. Coriander powder- 1 teaspoon
  7. Asafoetida - a pinch
  8. Salt to taste
  9. Mustard seeds- 1/2 teaspoon
  10. Fenugreek seeds - 1/2 teaspoon
  11. Fennel seeds - 1 teaspoon
  12. Green chilli - 4 chopped
  13. Black seeds{kalonji} - 1/4 teaspoon

Instructions

  1. Boil the amlas in a pressure cooker only for one whistle and let the pressure release by itself.
  2. When cool,remove the seeds and separate the segments.
  3. Heat oil in a wok and mustard seeds, fennel seeds,asafoetida, fenugreek seeds and black seeds and chopped green chillis and saute for a minute.
  4. Add turmeric powder,the amla segments, salt and red chilli powder, coriander powder and mix well. Add one tablespoon water and cover and cook for two minutes.
  5. Add sugar and mix again and remove from the flame after 1-2 minutes.
  6. Serve hot or cool as you like with parathas, pooris.
  7. Cool at room temperature and transfer to an air tight container.
