ABOUT Besani Garlic Bhindi RECIPE

This winter veggie is quite popular with everyone. So made this simple and yummy side dish. This is my version of a traditional Rajasthani cuisine which can be relished with chapatis or rice.

Ingredients Serving: 3

  1. 400 gms. bhindi (Okra), cut into 1
  2. 2-3 tbsp. Oil
  3. 1 tsp. cumin seeds
  4. 1/4 tsp. asafoetida
  5. 1 tbsp. garlic, chopped
  6. 1-2 green chilies, chopped
  7. 2 tbsp. roasted chickpea flour
  8. Salt to taste
  9. 1/2 tsp. turmeric powder
  10. 1 tbsp. Red Chili powder
  11. 1 Tsp. Coriander Powder
  12. 1 tsp. cumin powder
  13. 1 tsp. lemon juice
  14. 2 tbsp. coriander leaves

Instructions

  1. Heat oil in a pan and temper with cumin seeds. Saute for a few seconds. Add the garlic, green chilies and asafoetida. Fry till the garlic changes colour.
  2. Add the besan and saute till you get a nice aroma.
  3. Add the bhindi, salt, turmeric powder, coriander powder, cumin powder and red chili powder.
  4. Mix everything well and cook, covered on a low to medium flame till done. Sprinkle water and stir at intervals.
  5. When done, add lemon juice and coriander leaves. Give it a stir and switch off the flame. Serve as a side dish with either chapati or rice.
