ABOUT Mix vegetable Au Gratin RECIPE

Winter is all about baking. Gratin is a dish with a lightly browned crust of breadcrumbs or melted cheese. Gratin is a French baking culinary technique in which ingredients are layered in a shallow dish with a browned crust on top, often using breadcrumbs, grated cheese and/or butter. A gratin is baked or cooked under an overhead grill to form a golden crust on top and is traditionally served in it's baking dish.

Ingredients Serving: 5

  1. 2 Large potatoes, long shaped
  2. 1 cup Carrot, diced
  3. 1 cup Capsicum, diced
  4. 1 cup Cauliflower, diced
  5. 1 cup Beans, diced
  6. 1/2 cup Marrow, diced
  7. 3 cloves Garlic, minced
  8. 2 tbsp Garam masala (optional)
  9. 250 ml Cooking heavy cream
  10. 1/2 cup Cheddar cheese shredded
  11. 1/2 cup Cheddar cheese shredded
  12. 3/4 cup Mozzarella cheese shredded
  13. 1 tsp Oregano
  14. 2 CUP MILK
  15. 3 tbsp flour
  16. 1 Tbsp oil or butter
  17. Black pepper as required
  18. Salt as required

Instructions

  1. Cook the large potatoes in the microwave for 5 minutes. When the microwaved potatoes cools down, slice them as thinly and uniform as possible.
  2. Heat a pan, add oil and saute garlic. Add one by one veggies based on the cooking time required. Start with carrot, marrow, cauliflower, beans, capsicum and salt to taste. Add in the Spice powder, chilli powder and cook for another 4 minute
  3. Add 2 tbsp flour and give a good mix to coat the veggies. Add 2 cups of milk and let it cook until the sauce becomes thick.
  4. White Sauce: Whisk together the heavy cream, salt, pepper and 1 tbsp flour, bring it to boil with continuously stirring. Reduce the cream to ¾ quantity.
  5. Assembling: At the bottom of the baking dish, layer half of the potato slices in a single layer with edges overlapping. Sprinkle ¼ of both the cheeses over the potatoes.
  6. Toss in the whole veggies on top of the potato slices, gently press down the mixture and add in half of the white sauce.
  7. Again layer the remaining half of the potatoes overlapping, in a single layer. Pour over the remaining white sauce, spread mozzarella cheese, top it with cheddar cheese and finally sprinkle some oregano.
  8. Place it in the Microwave oven on grill mode and bake, uncovered, for 14 minutes or until you see a nice golden crust on top. Allow the dish to cool and it's ready to be served.
  9. Great for a brunch or a lazy dinner. This is a complete meal by itself and can be accompanied by breads.
