Arbi Masaledaar

Ingredients to make Arbi Masaledaar

  • Arbi 1/2 kg
  • hing a pinch
  • cumin seeds1/2 tsp
  • Powdered pomegranate seeds 1/2 tsp
  • Chopped ginger and garlic 2 tbsp
  • Fried onion paste 3/4 cup
  • tomatoes finely chopped 1 cup
  • turmeric powder 1 tsp
  • Garam masala 1/2 tsp
  • red chilli powder 1 tsp
  • Green chilli chopped 3
  • Dried methi 1 tbsp
  • Pav bhaji masala 1 tbsp
  • coriander powder 1 tsp
  • Coriander leaves for garnishing
  • oil for deep frying and cooking
  • salt to taste

How to make Arbi Masaledaar

  1. Peel arbi ,wash and spread it on kitchen towel to dry.
  2. If medium-sized cut in half or else in three.
  3. Heat oil in pan for deep frying and fry arbi till done or brown in color.
  4. In pressure cooker heat 2 tbsp oil, add hing.
  5. Add pomegranate seed powder, cumin seeds,ginger,garlic,onion paste,turmeric,red chilli,green chilli saute for 5 minutes.
  6. Then add tomatoes
  7. When oil separates add 1/4 cup of water bring to boil and mix in fried arbi, coriander powder, dried methi,salt and put on the lid.
  8. After 3 whistle open sprinkle pav bhaji masala, garam masala mix gently.
  9. Garnish with coriander leaves.

My Tip:

Make onion paste by frying onion slices till golden brown then cool it and grind.
