Vegetarian Laksa Soup

Ingredients to make Vegetarian Laksa Soup

  • oil 2 tsp
  • Tofu 50 gms
  • garlic chopped finely
  • 2 red chilles chopped finely
  • Vegetables like red, yellow capsicum, cabbage, carrot, french beans (Chopped into chunks)
  • salt as per taste
  • 1 litre water
  • ginger as per taste
  • lemon grass 2 strings
  • Sevai/noodles 1 cup
  • coconut milk 1/2 cup
  • 1 long slit green chilly
  • 2 tsp cornflour mixed in cold water
  • 3 crushed peppercorns
  • 3 tbsp spinach chopped
  • coriander leaves chopped
  • lemon juice 1 tsp

How to make Vegetarian Laksa Soup

  1. Fry in oil, tofu chopped into small pieces.
  2. Add 1 tsp oil to the same vessel, add chopped garlic and fry till golden brown.
  3. Add 2 red chillies finely chopped. Saute for a minute.
  4. Add chopped vegetables of your choice like red, yellow capsicum, cabbage, carrot and french beans. Add salt, cover and fry for 2 minutes.
  5. Mean time keep another vessel filled with 1 litre water for boiling add lemon grass and crushed ginger to it. Boil for 5 minutes and strain.
  6. Add sevai/ noodles to this hot water and bring it to boil, cook till sevai or noodles are cooked.
  7. Pour the noodles/sevai, ginger, lemon grass flavoured water to the vegetables sauce pan.
  8. Add 1 cup coconut milk to it. Add 1 long slit green chilly in the soup. Add 2 tsp cornflour mixed in cold water to it.
  9. Add 3 crushed peppercorns. At last add 3 tbsp spinach chopped. Add 1/2 lemon juice and serve hot.

My Tip:

Serve along with garlic butter applied to toasts.
