Ingredients Serving: 4

  1. Oil 2 tsp
  2. Tofu 50 gms
  3. Garlic chopped finely
  4. 2 red chilles chopped finely
  5. Vegetables like red, yellow capsicum, cabbage, carrot, french beans (Chopped into chunks)
  6. Salt as per taste
  7. 1 litre water
  8. Ginger as per taste
  9. Lemon grass 2 strings
  10. Sevai/noodles 1 cup
  11. Coconut milk 1/2 cup
  12. 1 long slit green chilly
  13. 2 tsp cornflour mixed in cold water
  14. 3 crushed peppercorns
  15. 3 tbsp spinach chopped
  16. Coriander leaves chopped
  17. Lemon juice 1 tsp


  1. Fry in oil, tofu chopped into small pieces.
  2. Add 1 tsp oil to the same vessel, add chopped garlic and fry till golden brown.
  3. Add 2 red chillies finely chopped. Saute for a minute.
  4. Add chopped vegetables of your choice like red, yellow capsicum, cabbage, carrot and french beans. Add salt, cover and fry for 2 minutes.
  5. Mean time keep another vessel filled with 1 litre water for boiling add lemon grass and crushed ginger to it. Boil for 5 minutes and strain.
  6. Add sevai/ noodles to this hot water and bring it to boil, cook till sevai or noodles are cooked.
  7. Pour the noodles/sevai, ginger, lemon grass flavoured water to the vegetables sauce pan.
  8. Add 1 cup coconut milk to it. Add 1 long slit green chilly in the soup. Add 2 tsp cornflour mixed in cold water to it.
  9. Add 3 crushed peppercorns. At last add 3 tbsp spinach chopped. Add 1/2 lemon juice and serve hot.
