ABOUT Sabudana Pudding RECIPE

Basic dish is Malaysian dessert. Name Gula melaka sago pudding. This is my own variation, absolutely delicious.

Ingredients Serving: 4

  1. 1/2 cup sabudana (Do not soak in water)
  2. 2 liter water
  3. 1 egg white
  4. 2 tbsp powdered sugar
  5. 1/2 tsp strawberry essence
  6. For strawberry syrup:
  7. 1 cup chopped strawberry
  8. 1/2 cup sugar


  1. Boil 2 litter water and pour the sabudana in it.
  2. Keep stirring and make sure that sabudana do not stick with each other while in the water.
  3. When the sabudana look fluffy and translucent, it means they are cooked.
  4. Strain the sabudana from the water and immediately pour it into ice cold water.
  5. Again stir it, and then strain it. There should be no excess water, keep aside in the strainer only.
  6. Take an egg white in a bowl, add sugar and whip it so that it becomes a nice soft meringue.
  7. Add sabudana in it and slowly mix them together by cut and fold method. Take a small moulds and pour the mixture in it.
  8. Bake it in water bath at 150 degree centigrade for 45 to 50 minutes. When it cools, kept it in the fridge to set. (1 hour or more).
  9. After that, cut through the edges from the mould, like the way you de mould a cake, then flip it over a plate.
  10. Sabudana pudding is ready.
  11. Strawberry syrup.
  12. Add chopped strawberries and sugar in a saucepan with 1/2 cup of water. Bring to boil, when the sugar is dissolved and the strawberries are soft. Turn off the gas.
  13. Let it cool and then puree in a blender. Strain the strawberry remains and put it again to boil for a few minutes to reduce. The syrup is ready.
  14. Pour strawberry syrup over it and serve.
