ABOUT Dum Ka Kheema Pav RECIPE

Hyderabadi Dum Ka Kheema is a lovely dish that is best served with naan. Here I gave it a twist by using it in our very own Pav buns and thus emerged a new beautiful looking dish. Hot Pavs with delicious and aromatic delicacy from the City of Nawabs perfectly compliments each other. Kids will love to have these as a breakfast or brunch or even for their tiffin or as an afterschool treat. Ingredients Serving: 7

  1. Pav buns 12-16
  2. Mutton mince 500 gm
  3. Ginger garlic paste 1 tbsp
  4. RED CHILLI POWDER 1 TBSP
  5. Green chillies whole 3
  6. Salt 1 tbsp
  7. Turmeric 1/2 tsp
  8. Cubeb pepper powder 1 tsp
  9. Yoghurt 200 gm
  10. Onions sliced and deep fried 2 cups
  11. Garam masala powder 1 tsp
  12. Cashewnut paste 2-3 tbsp
  13. Coriander leaves chopped 3 tbsp
  14. Pure desi ghee 1 tbsp
  15. Caraway seeds 1 tsp
  16. Butter 2 tbsp

Instructions

  1. In a wide pan, heat some butter and warm up the pav buns until done.
  2. Keep them aside until use.
  3. Heat oil in a kadai and deep fry the sliced onions just as we do for biryanis
  4. In a bowl, add washed mutton mince at first.
  5. Followed by all the ingredients mentioned along with the yoghurt except ghee.
  6. Mix well and keep it covered for 30 minutes for a perfect marination.
  7. In a cooking pot,add this marinated mutton mince.
  8. Also add the fried and crushed onions followed by the chopped coriander and 2 tbsp of oil from the kadai in which the onions were fried.
  9. Cover and allow it to simmer until done. Do not open the lid at frequent intervals since it is a process of slow cooking (dum) method
  10. After about 30-35 minutes, it is almost done. Garnish with chopped coriander and a tablespoon of pure desi ghee.
  11. Serve it hot squeezed with some lemon juice and onion rings with the buttered pav buns. Enjoy!
