Red Velvet Cake

Ingredients to make Red Velvet Cake

  • Cake flour 2 1/2 cups
  • Castor sugar 1 1/2 cups
  • Cocoa powder 2 tbsp
  • eggs 2
  • butter milk 1 cup
  • Red food color 2 tbsp
  • Vanilla essence 1 tsp
  • butter 115 gm
  • Soda bicarbonate 1 tsp
  • vinegar 1 tsp
  • For the frosting :
  • cream cheese (kraft) 400 gm
  • Icing sugar 1 cup
  • Whipped cream 1 cup

How to make Red Velvet Cake

  1. Sift flour and cocoa powder. Set aside.
  2. Add color to the butter milk.
  3. With an electric beater, beat sugar and butter for 2 minutes. Add an egg at a time. Continue beating till fluffy. Add vanilla.
  4. Add flour and buttermilk alternatively starting with flour. Fold gently.
  5. Combine soda and vinegar into a small bowl. Allow it to fizz. Immediately add this to the batter and fold in.
  6. Divide the batter equally into two greased baking trays.
  7. Bake in a preheated oven at 180 degree centigrade for 25 minutes. Check with a toothpick. If it comes out clean then the cake is done. If not, bake for 3 to 4 minutes more. Cool down completely.
  8. Beat the cream cheese and icing sugar for 5 minutes or until mix together. Do not over beat. Add the whipped cream and beat lightly for 2 minutes.
  9. Put a layer in between the two cakes. Coat the entire cake with frosting. Decorate as you wish.

My Tip:

Make the cake one day before frosting.
