ABOUT Chicken Curry RECIPE

A spicy mouth watering preparation for a rainy day.

Ingredients Serving: 4

  1. Chicken with bone- 1 kg
  2. Oil- 3-4 tablespoon
  3. Onion- 2 big or 3 medium sized
  4. Tomato- 1 medium sized
  5. Yogurt- 2 tablespoon
  6. Ginger- 1 and 1/2 inch
  7. Garlic- 8-10 cloves
  8. Green chillies- 1-2 nos
  9. Chicken Curry Masala (Any) - 1 teaspoon
  10. Turmeric powder- 1/2 teaspoon
  11. Red chilli powder- 1 teaspoon
  12. Coriander Powder - 1 heaped teaspoon
  13. Cumin powder - 1 teaspoon
  14. Roasted Garam Masala - 2 black cardamoms, 2-3 green cardamoms, 3-4 cloves, 2 inch cinnamon stick, 1/2 Star Anise, 2 Dry red chillies (kashmiri)
  15. Salt to taste
  16. Coriander leaves - for garnishing

Instructions

  1. Wash and clean the chicken. Keep it aside.
  2. Roast together the ingredients mentioned for the 'Garam Masala' and grind it into a powder form.
  3. Make a paste of the ginger, garlic and green chillies together. Also make a paste of the tomato.
  4. Grind half of the onions and chop the rest of it roughly.
  5. In a deep bottomed pan or kadai, heat oil and add the roughly chopped onions, saute it for 2-3 mins. As it starts turning a little brown in colour, add the onion paste along with the ginger-garlic paste.
  6. Now add the chicken and fry it for 5-10 mins.
  7. Mix all the dry spices with the roasted garam masala and yogurt, add it to the pan along with the tomato paste. Keep sauteing it for further 5 mins or till the oil separates itself.
  8. Finally add 1 cup of hot water or more as per your gravy requirement. Cover and cook for 20 mins or till the chicken gets completely cooked.
  9. Garnish with chopped coriander leaves. The chicken curry is ready to be served.
