ABOUT Yellow cucumber Chutney / Guntur Dosakaya pachadi RECIPE

This is Andhra special instant chutney famously known as guntur dosakaya pachadi. It is spicy, tasty and nutty goes well with hot steamed rice.

Ingredients Serving: 4

  1. Yellow cucumber/ guntur dosakaya - 1
  2. Oil - 1 tsp
  3. Urad dal - 3/4 tsp
  4. Chana dal - 3/4 tsp
  5. Mustard seeds - 1/2 tsp
  6. Methi seeds - 1/4 tsp
  7. Green chilli - 2
  8. Red Chilli - 3
  9. Coriander leaves - 1 tsp
  10. Tamarind pulp - 1 tsp
  11. Turmeric Powder - 1/4 Tsp
  12. Hing - 1 pinch
  13. salt as per taste
  14. For tempering
  15. Oil - 1 tsp
  16. Mustard seeds - 1/2 tsp
  17. Cumin Seeds - 1 Tsp
  18. Curry Leaves - 1 sprig
  19. Red chilli - 1

Instructions

  1. Soak tamarind in water, peel yellow cucumber skin, chopped 3/4 rth cucumber into small pieces and remaining large pieces and keep it aside.
  2. Heat a pan with 1 tsp of oil add urad and Chana dal once it starts changing color add Methi seeds, mustard seeds fry well.
  3. Then add red and green chilli fry well on low flames switch off the flames and add tamarind pulp. Let it cool to room temperature.
  4. Take the add in mixer jar grind it to coarse powder then add large cucumber pieces, turmeric powder, coriander leaves and grind it coarsely.
  5. Add the above into small cucumber pieces mix everything well by adding salt.
  6. Heat a pan by adding oil to temper, add mustard seeds once it splutters add cumin seeds, curry leaves, red chilli fry well and add into above mixture. That's it guntur dosakaya pachadi is ready to serve.
  7. Have it with hot steamed rice with dollop of ghee and enjoy :heart_eyes:.
