Firstly in a pressure cooker heat 3 tsp Ghee and roast 1 cup washed Moog dal. Roast for 5 mins on low flame or until it turns aromatic
Now add 1.1/2 cup milk and 3 cup water. Stir well
Pressure cook for 4 whistles on medium flame.
After cooked dal whisk smooth alternatively blend to smooth paste without adding water in blender.
Now transfer to the large kadai or pan.
Then add 1/2 cup water and stir well to form a smooth consistency
Now add Rice flour and stir well
Keep stirring until the mixture starts to separate from pan
Cover and simmer for 5 mins. Making sure the flour is cooked completely
Add 2 tsp ghee and continue to mix. mix until non sticky dough is separate from the pan easily
Now transfer the dough to bowl or plate and cool slightly. Knead to form a soft non sticky dough. Keep aside
Take Pinch of a ball sized dough roll and flatten it.
Now using a tooth pick make the design. Repeat this process to prepared all pitha
Now Heat the oil and deep fry in medium hot oil.
Allow floating , keeping the Flame on low.
Once it starts to float, stir occasionally, and now adjust the flame to medium flame and fry in medium flame
Fry until it turns golden brown colour after remove to plate.
Sugar syrup preparation:- In a vessel take 2 cup water and 2 cup sugar.
Stir and dissolve sugar completely
Boil the sugar water for 5 mins or until it turns sticky.
Add 1/2 tsp crushed cardamom powder mix well cover and keep aside.
Lastly drop them into warm sugar syrup and coat both sides.
Cover and rest for 2 hours. Or until pitha absorb sugar syrup.
Finally enjoy soft & Juicy moong dal Pitha garnish with dry fruits.
